Farm Description

Mormora farm is located in the southern Guji zone of Shakiso. The people are known as Gujii Oromo, and coffee farming has been a core part of the culture in the highland areas. It's a distinct coffee from Yirga Cheffe, and Sidamo. Geographically, culturally, and in terms of cup flavors, these southern coffees have a different flavor profile while maintaining the same general characteristics. Guji Highland farm was founded in 2012, and is a family owned and operated farm project. The plantation is roughy 250 hectares in size, sits between 2000 and 2300 meters above sea level, and is situated under the canopy of surrounding natural forest. They practice organic farming at Mormora, as well as at their other farm Guji Highland (from whom we are selling a dry process coffee HERE) benefitting from decades of plant debris decomposing on the forest floor. They add new plantings to the farm each year, all of the seed originating from a local heirloom that was collected nearby (they refer to as a "mother tree"). The family works with local small holders as well, buying their coffee, and also helping by offering training at the farm level as well as at their mill.

Cupping Notes

There's a bergamot citrus floral note deep in this Shakiso coffee that builds in strength as you move from dry fragrance, to wet aromatics, and finally at full steam in the brewed coffee. The fragrance has muted honey and graham smells at City roast, a sweet orange accent, and subtle florals too. The wet aroma is honey sweet as well, like wild honey florals, so aromatically potent, and a citrus blossom floral note released on the break. You can expect dark stone fruit smells in darker roasts, our deep City+ (close to FC) showing plum-like aromatics. Once our City roast cooled, a first sip reveal perfumed Earl Grey with oil of bergamot, rose water floral, along with a light tart flavor of lemon oil. The latter effect accentuates a perception of citric-like brightness in the cup, tea with a lemon spritz, or sweet lime-ade drink. "Refreshing" is an odd descriptor for coffee, but was put to paper when assessing this Mormora coffee! A taste of our City+ roast echoed aromatics, dark plum and prune background notes, with a squeeze of citrus juice and honey sweetness mixed in. Mormora is a light bodied coffee, and in our experience will shine brightest with light to middle roast development, nowhere near 2nd snaps where delicate flavors are lost to smokey roast tones.
